Tasked with serving a signature dish that represents their home nation, each will be vying to beat their opponent in the hope of becoming one of eight quarter finalists. Featuring Fred, Emma and guest judges Jay Rayner and Joe Denison-Carey.

Chef Filipe pushes the limits with his signature dish “Lobster francesinha”: a delicacy from the ocean combined with the powerful flavours of a famous northern Portuguese sauce. Additional textures of a tapioca crisp elevate this signature dish and freshen the palate with the sweet and zesty infamous azorean pineapple.

The honor of representing Portugal in a World Chef Competition was awarded to Chef Filipe. It being a “one in a life-time” experience he didn’t hold back. Using traditional cooking techniques paired with avant-garde flavours and textures, Chef Filipe brought to life a new unique portuguese dish that he can proudly call his own.
